Easy Rice and Beans

Serve this over a bowl of plain rice, or, if you want to get a little fancy, serve it over cilantro lime rice. When preparing this recipe you may want to cook the onions first if you like them on the more cooked side. Simply dice them up first and cook separately in the large round for about a minute or two. Then add the rest of the ingredients and cook as usual.

Instructions
  1. Place large round on microwave safe plate.
  2. Drain and rinse black beans, add to large round
  3. Drain tomatoes, and corn. Add to large round. (If you want the mixture to have more liquid feel free to skip some or all of the draining.
  4. Dice up bell pepper, and onion. Add to large round.
  5. Sprinkle, cumin, thyme. Add garlic. Stir until everything is well combined. Taste and add salt if desired.
  6. Place octagonal on top of large round and microwave for 4-6 minutes (it's usually about 6 for us). Watch it when you remove the octagonal bonmat as the steam will be hot.
  7. Once heated through serve over rice. Top with cheese and sour cream if desired.
